Panama 2018 Day 4: Local Market

On offer at the local market in Rio Hato: mondongo [tripe], and cow foot. I gather you make a sort of gelatinous soup out of the latter. Tia Mary Ross, we could use your culinary skills here. ๐Ÿ™‚ If you are a dab hand with pheasant, I’ll bet you could come up with something for cow foot too.

  1. Did you know that in St. Louis, fried tripe sandwiches are the real deal? Seriously. And as far as the cow’s foot is concerned, if you can find it here, I’ll cook it. It’s apparently a Jamaican delicacy. mmmmm.
